Keep this easy vinaigrette in your backpocket and you’ll never touch the bottled stuff again. Every vinegar is different, so adjust your olive oil according to taste. You’re looking for a particular balance; aim to curb the vinegar’s sharpness without allowing the rich flavor of the olive oil to dominate.

Ingredients

medium shallot, minced (about 3 tablespoons)
- 2 Tbsp.
vinegar (such as white wine, apple cider, champagne, or red wine)
- 2 tsp.
Dijon mustard
- 1/3 cup
extra-virgin olive oil
Kosher salt
Freshly ground black pepper
Directions
- Step 1In a medium bowl, whisk together shallot, vinegar, and mustard. Slowly stream in olive oil, whisking constantly, until mixture is smooth and emulsified.
- Step 2Season to taste with salt and pepper.
- Step 3Vinaigrette will keep, tightly covered in the refrigerator, for about a week.
