We love the air fryer for most everything, but especially for breaded veggies. The squash (green or yellow works!) gets just as crispy as if it was deep fried, and even more so than baking. It's a great side dish or for dipping in marinara. Serve it with some air fryer pork chops and call it dinner!

Ingredients
- 2
yellow squash or zucchini, cut into 1/2" rounds
- 1/2 cup
all-purpose flour
Kosher salt
Freshly ground black pepper
- 2
large eggs
- 1/2 cup
buttermilk
- 2 cups
panko bread crumbs
- 1/2 cup
freshly grated Parmesan
Directions
- Step 1Place flour in a shallow bowl and season with salt and pepper. Add eggs and buttermilk to another bowl and whisk to combine. Combine bread crumbs and Parmesan in a third bowl and season with salt and pepper.
- Step 2Dredge squash in flour, then dip in eggs, and press into bread crumb mixture.
- Step 3Working in batches, place breaded squash in basket of air fryer and cook at 400° for 6 to 8 minutes per side, until golden and crispy.
