Stir-fries are fast, easy, and simple, and this classic green bean offering is no different. We go the extra mile here and use 2 slices of bacon for some extra smoky flavor, but you can simply substitute in extra-virgin olive oil if you prefer to go the vegetarian route. If you're vegan, you can also sub out the oyster sauce for more hoisin; just note that your dish will be a bit sweeter than the original version.

Ingredients

slices bacon, cut into 1/2" pieces (optional)
- 2 Tbsp.
reserved bacon fat or extra-virgin olive oil
- 1 lb.
green beans, trimmed and halved
- 10
cloves garlic, quartered
1" piece ginger, minced
- 1/2 tsp.
crushed red pepper flakes (optional)
- 1/2 tsp.
freshly ground black pepper
- 1/2 tsp.
freshly ground white pepper
- 1 tsp.
rice wine vinegar
- 1 1/2 Tbsp.
hoisin sauce
- 1 Tbsp.
oyster sauce
- 2
green onions, sliced
- 2 tsp.
toasted sesame oil
Sesame seeds, for garnish
Directions
- Step 1If using bacon: In a large skillet over medium heat, cook bacon until golden and fat is mostly rendered, 5 minutes. Transfer bacon to a bowl and reserve 2 tablespoons bacon fat in pan.
- Step 2If not using bacon: In a large skillet over medium heat, heat 2 tablespoons olive oil.
- Step 3Add in green beans, garlic, ginger, and red pepper flakes (if using) and stir frequently until beans are beginning to blister, 6 to 8 minutes. Stir in black and white pepper.
- Step 4Stir in vinegar, hoisin, and oyster sauce until evenly combined, then return bacon (if using) to skillet and add green onions. Cook, stirring frequently until green onions soften. Remove pan from heat and stir in sesame oil.
- Step 5Garnish with sesame seeds before serving.
If your pan starts to run dry or the sauce begins to burn, add in 1 to 2 tablespoons of water or broth of your choice to help deglaze.
