Ingredients
Chli With Beans
- 1 lb.
lean ground beef
- 1
medium yellow onion, finely chopped
- 3
cloves garlic

(14.5-oz.) can crushed tomatoes
- 1
(15-oz.) can tomato sauce
- 1
(15-oz.) can kidney beans, drained
- 2 Tbsp.
chili powder
- 1 Tbsp.
ground cumin
- 1 Tbsp.
coarse salt
Freshly ground black pepper
Ground cayenne pepper
Queso Sauce
- 2 cups
store-bought cheese sauce
- 1
(10-oz.) can diced tomatoes with chilies
Totchos
- 1
(2-lb.) bag frozen potato tots
- 1 1/2 cups
corn chips
Chili with Beans
Queso Sauce
- 3/4 cup
shredded cheddar
- 6 Tbsp.
sour cream
- 2 Tbsp.
thinly sliced green onions
Directions
1. Make Chili with Beans: In a 5- to 6-quart Dutch oven over medium heat, add ground beef and cook, breaking up meat with a wooden spoon, until no longer pink, 6 minutes. Drain fat. Add onion and garlic, cook until onion is translucent, 5 to 7 minutes. Add crushed tomatoes, tomato sauce, kidney beans, chili powder, and cumin. Simmer for 20 minutes. Add salt, plus black pepper and cayenne pepper to taste.
2. Make Queso Sauce: In a small saucepan over low heat, combine cheese sauce and diced tomatoes with chilies, and cook over low heat until warm, 10 minutes.
3. Assemble Totchos: Cook potato tots according to package instructions. Divide tots into 6 bowls. Place 1/4 c. each of corn chips, chili with beans, and queso sauce on top of each. Top each with 2 tbsp. shredded cheese, 1 tbsp. sour cream, and 1 tsp. green onions.
