Okay, you caught me—this isn't really a salad recipe. It's more just a platform for me to say, I think it's time you gave century eggs a try. Yes, they are very much an acquired taste, and yes, if you didn't grow up with them, you might find it quite strange and unappealing, but what is life if not trying new things?
I listed these beautiful eggs on my list of must-have Chinese pantry staples and they really are one of my favorite foods. The translucent whites of the eggs have a fun, bouncy, Jell-O-like texture and the yolks are incredibly creamy, just like brie. I love to eat them alongside congee, or on their own, dressed in a simple vinaigrette like the one below.

Ingredients

century eggs, peeled
- 1 Tbsp.
Chinese black vinegar
- 1 Tbsp.
toasted sesame oil
- 2 tsp.
low-sodium soy sauce
- 2 tsp.
- 1/8 tsp.
MSG (optional)
- 1
clove garlic, grated
- 1
green onion, thinly sliced
Directions
- Step 1Cut each century egg into 6 wedges and place onto a plate.
- Step 2In a small bowl, stir together all remaining ingredients and drizzle over eggs.
