I went camping for the first time with Julia, Chelsea, and Justin and let's just say it was an experience. Cooking over an open fire was intensely therapeutic and tear-stained: that smoke is no joke.
These tacos were made with canned beans, corn tortillas, scrambled eggs, and a can of Spam which Julia had requested and which I could not turn down. Aside from getting carried away with the seasoning and getting a little heavy-handed with the sodium—I learned that Spam is already VERY salty straight out of the can—these turned out pretty delicious! There's a nice subtle, smoky essence winding through every bit of every bite.
I used whatever spices I had on hand, so please feel free to substitute in what you have on hand for your version of this recipe! If you give these tacos a try, drop us a line down below and let us know how you liked it!
