If you're someone that typically enjoys eggplant in the form of eggplant Parm, we hear you. But when you don't feel like setting up a dredging station, the air fryer will give you a slightly crunchy outside with the much-loved creamy inside. Plus, it only needs a little bit of oil to help all of the seasoning stick. Serve it with your favorite marinara and your new favorite side is ready!

Ingredients

medium eggplant
- 1 Tbsp.
extra-virgin olive oil
- 1 tsp.
dried oregano
- 1/2 tsp.
garlic powder
Pinch of crushed red pepper flakes
Kosher salt
Freshly ground black pepper
Grated Parmesan, for serving
Directions
- Step 1Cut off ends of eggplant and cut in half lengthwise. Cut into strips 1" thick and 3" long. In a medium bowl, toss eggplant, oil, oregano, garlic powder, and red pepper flakes; season with salt and black pepper.
- Step 2Working in batches, in an air-fryer basket, arrange eggplant in a single layer. Cook at 370°, shaking basket halfway through, until golden, about 14 minutes. Top with Parmesan.
