If you can soak brioche bread to make classic French toast, what do you get when you soak flour tortillas? As I found out, something that looks and tastes like a crêpe with a little more of an al dente chew, which pairs super well with whipped cream, fresh fruit, and a little drizzle of melted chocolate or sweet honey. The longer you let the tortilla sit in the soak, the softer and more tender the chew will become. Surprisingly, these taste pretty good the day after, chilled in the refrigerator with all the fillings inside.

Ingredients
For the French toast
- 2
large eggs
- 1/4 cup
whole milk
- 2 Tbsp.
heavy cream
- 2 Tbsp.
packed brown sugar
- 1 tsp.
pure vanilla extract
- 1/2 tsp.
ground cinnamon
Pinch ground nutmeg
Pinch kosher salt
- 8
medium flour tortillas
Butter, for pan
For topping
Sliced strawberries
Blueberries
Sliced bananas
Powdered sugar
Directions
- Step 1In a large bowl, whisk eggs, milk, cream, sugar, vanilla, cinnamon, nutmeg, and salt until smooth. Add tortillas one by one, flipping each to make sure each is entirely coated by the mixture. Let all tortillas soak for at least 15 minutes, up to 30 minutes.
- Step 2In a large skillet over medium-low heat, melt a thin tab of butter. Place one soaked tortilla in skillet and cook until each side is golden, 1 to 2 minutes per side.
- Step 3Serve with whipped cream and fruit, drizzled with melted chocolate or sprinkled with powdered sugar, if desired.
