Blue cheese balances the tomatoes' acidity in this simple salad.

Ingredients
- 4 Tbsp. olive oil
- 3 Tbsp. fresh lemon juice
- 1 tsp. paprika
- 3/4 tsp. sugar
- 1/4 tsp. salt
- 1/4 tsp. red pepper flakes
- 1 3/4 lb. heirloom beefsteak tomatoes
- 3/4 lb. cherry tomatoes
- 1 small bunch watercress
- 1/2 head radicchio
- 2 oz. crumbled blue cheese
Directions
- Step 1In a small bowl, whisk together the first 6 ingredients. In a medium bowl, toss tomatoes with all but 2 tablespoons of dressing, then arrange tomatoes on a serving dish.
- Step 2In the same medium bowl, toss watercress and radicchio with remaining dressing, then arrange atop tomatoes. Sprinkle on blue cheese.
