Aioli is often seen as boujie mayo which… it kinda is! But this Mediterranean sauce is slightly more luxe for a reason. First, the fresh garlic adds a delightful kick and complex savory flavor that regular mayo doesn’t typically have. Additionally this version is hand whipped and will result in a velvety texture that is perfect for spreading on all of your sandwiches or for dipping your fries into.

Ingredients
- 2
egg yolks
3-4 garlic cloves, grated
- 1 Tbsp.
freshly squeezed lemon juice
- 1 1/2 tsp.
kosher salt
- 2/3 cup
high quality neutral oil, such as grapeseed or canola
Directions
- Step 1In a medium bowl, whisk together egg yolks, garlic, lemon juice, and salt until yolks have become paler in color and the garlic is completely incorporated.
- Step 2Slowly start adding in oil, first a few drops and then in a slow stream, as you vigorously whisk. Whisk until you’ve reached your desired consistency.
- Step 3Store in the refrigerator, in an airtight container, for 1 to 2 weeks.
