The most important thing about a scone? How buttery and flaky they are! These certainly pass the test and they come out tall and proud with plenty of layers and perfectly buttery. This base recipe works well with any extra add-ins and can even go sweet or savory. We include a few of our favorite variations, but don't let the fun stop here. Go wild with some of your favorite fruit, chocolate chips, or favorite cheeses!

Ingredients
- 3 cups
all-purpose flour
- 1 Tbsp.
granulated sugar
- 1 Tbsp.
baking powder
- 1 tsp.
kosher salt
- 1/2 cup
(1 stick) cold butter, cut into cubes
Desired mix-ins
- 3/4 cup
buttermilk, plus more as needed
- 2
large eggs
For cacio e pepe:
- 1/2 cup
freshly grated Parmesan
- 1/2 cup
freshly grated Pecorino
- 1 tsp.
freshly ground black pepper
For mozzarella and basil:
- 1 cup
shredded mozzarella
- 2 Tbsp.
thinly sliced basil
For cheddar bacon:
- 1 cup
shredded cheddar
- 1/2 cup
chopped cooked bacon
- 2 Tbsp.
sliced green onions or chives
For goat cheese and rosemary:
- 1 cup
crumbled goat cheese
- 2 Tbsp.
freshly chopped rosemary
Directions
- Step 1Line a large baking sheet with parchment. In a large bowl, whisk together flour, sugar, baking powder, and salt. Add butter and use your hands to cut into flour until the size of peas. Add mix-ins and toss to coat in flour.
- Step 2In a small bowl or glass measuring cup, whisk together buttermilk and eggs. Add to dry ingredients and use a rubber spatula to mix until a dough starts to form. Add more buttermilk, 1 tablespoon at a time, as needed to help dough form.
- Step 3Dump dough onto counter and gently pat into an 8” circle. Use a knife or bench scraper to cut into 8 triangles. Place on prepared baking sheet and freeze for 30 minutes.
- Step 4Preheat oven to 400°. Bake scones until golden, 20 minutes.
