Spice-Rubbed Roast Cornish Hens

Ingredients
- 4 tsp. smoked paprika
- 2 tsp. garlic powder
- 2 tsp. dried oregano
- Kosher salt and pepper
- 1 Tbsp. olive oil
- 4 Cornish game hens
- 1/2 cup dry white wine
- 3/4 cup low-sodium chicken broth
- 2 Tbsp. unsalted butter
- 2 Tbsp. all-purpose flour
- 1/4 cup chopped fresh flat-leaf parsley
Directions
- Step 1Adjust oven racks to lower and middle positions. Heat oven to 425 degrees F. In a small bowl, combine paprika, garlic powder, oregano, and 2 teaspoon each salt and pepper; mix in oil.
- Step 2Place hens on a large rimmed baking sheet and rub with spice mixture. Arrange skin-side up and roast on middle rack for 20 minutes. Pour wine onto baking sheet and continue roasting until a thermometer inserted in thickest part of thigh registers 165 degrees F, 10 to 15 minutes more. Transfer to a cutting board and let rest for at least 10 minutes before cutting in half.
- Step 3Meanwhile, using a spatula, scrape up any bits from baking sheet and pour pan juices and bits into a 2-cup measuring cup. Add enough chicken broth to make 1 1/2 cups total. Transfer to a small saucepan and bring to a simmer.
- Step 4In a small bowl, combine butter and flour, then add to saucepan and simmer, whisking often, until slightly thickened, 3 to 4 minutes. Remove from heat and stir in parsley (if using). Serve with hens.
