This was one of Chef Millie Peartree's favorite dishes at her NYC restaurant. She seasons the ground turkey with fresh green pepper, onion, and a lot of spices. The simple barbecue-ketchup glaze caramelizes the tops and edges beautifully. The best pairing? Her Southern Macaroni & Cheese + Low Country Collared Greens, of course.

    medium green bell pepper

  • 1

Directions

    1. Step 1Preheat oven to 375° and grease an  8½”-x-4½” loaf pan with cooking spray.
    2. Step 2In a large bowl, mix ground turkey with crackers (or bread crumbs), onion, green pepper, egg, paprika, garlic powder, salt, thyme, black pepper, and ketchup, being sure not to overwork the meat mixture.
