Ingredients
Blueberry Layer
- 1/2 pt. fresh blueberries
- 1 cup blueberry juice cocktails
- 2 Tbsp. superfine sugar
- 2 Tbsp. blue curaçao
- 2 Tbsp. plain nonfat yogurt
- 2 Tbsp. fresh lime juice
- 1 pinch salt
Cantaloupe Layer
- 3 cups fresh ripe cantaloupe chunks
- 2 Tbsp. fresh lemon juice
- Tbsp. superfine sugar
- 1 pinch salt
Directions
- Step 1Make bluberry layer: Combine blueberries, juice, and sugar in a small saucepan and bring to a boil. Reduce heat and simmer 2 minutes, or until berries split.
- Step 2Remove from heat and cool to room temperature. Pour mixture into a blender and add blue curaçao, yogurt, lime juice, and salt. Puree until smooth.
- Step 3Fill 10 3-ounce pop molds halfway(about 1/4 cup each). Freeze 30 minutes or until partially frozen.
- Step 4Make the cantalope layer: Purée ingredients for cantaloupe layer in a blender until smooth.
- Step 5Pour over partially frozen blueberry layer and insert sticks. Freeze at least 24 hours before unmolding.
