Spice up ground turkey with fresh summer veggies and curry paste for a quick but flavorful Indian-inspired dinner.

Ingredients
- 1 1/4 lb. ground turkey
- 1/4 cup low-fat plain Greek yogurt
- 1/4 cup sweet mango chutney
- 2 zucchini
- 2 Tbsp. mild curry paste
- 8 small Hamburger buns
Directions
- Step 1In a small bowl, mix together yogurt and chutney.
- Step 2In another bowl, gently combine turkey, grated zucchini, curry paste, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Form into 8 patties, about 3 inches in diameter.
- Step 3Spray a large nonstick skillet with olive oil cooking spray. Over medium heat, cook patties 6 to 7 minutes per side until cooked through, or 165 degrees F at the center. Meanwhile, sprinkle zucchini slices with salt and pepper to taste. Place in the same skillet and cook on both sides, 5 minutes or until browned. Remove zucchini and toast buns in pan for 1 to 2 minutes.
- Step 4Spread 1 tablespoon of the yogurt mixture on the bottom half of each bun, and, if you want, add lettuce, tomato, and a red onion slice. Put burger and zucchini slices on top. Spread remaining yogurt mixture on top halves of buns.
