During busy weeknights, we can't get enough of quick, easy, and cheap dinners. With only 5 ingredients and less than 30 minutes, these black bean tostadas will have you serving up an easy and delicious vegetarian dinner on the table with hardly any work at all. These tostadas use ingredients you’re more than likely to have on hand, making them the easiest last-minute meal to throw together when you just can’t be bothered to cook up anything else. The best part? Because of their simplicity, these tostadas are endlessly versatile. Make them as-is for the most basic version, or use them as a base to add all your favorite seasonings and toppings.
When it comes to seasoning your black beans, the world is really your oyster. Use a bit of salt and pepper if you’re looking to stay simple, or kick things up a notch by adding cumin, paprika, garlic powder, or chili powder to your beans. Looking to really take this dish over the top? If you’re not in a rush, skip the cans and try your hand at cooking dry black beans!
We kept things simple here with our toppings, but you can always add on additional toppings like pico de gallo, corn salsa, avocado ranch, or endless crunchy veggies like radishes or pickled red onions. Ingredients

(15-oz.) cans black beans, rinsed, drained
- 1 tsp.
(or more) kosher salt
- 1/2 tsp.
chili powder
- 1/2 tsp.
freshly ground black pepper
- 1/2 tsp.
ground cumin
- 8
tostadas
- 2 cups
shredded pepper Jack
Thinly sliced avocados and hot sauce, for serving
Directions
- Step 1Arrange a rack in center of oven; preheat to 350°. In a small saucepan over medium heat, bring beans, salt, chili powder, pepper, and cumin to a simmer. Cook, stirring occasionally, until beans are warmed through, about 10 minutes. Smash with a wooden spoon, adding more water if needed to help create a smoother consistency, until most of the beans are smashed with some whole remaining; season with salt, if needed.
- Step 2Meanwhile, arrange tostadas on a large baking sheet. Sprinkle with cheese.
- Step 3Bake tostadas until cheese is melty, about 5 minutes.
- Step 4Top tostadas with bean mixture and avocado slices. Drizzle with hot sauce.
