Tahini cookies are kind of like a more grown up version of your favorite peanut butter cookie and so much better. They are soft with a slight chew and sesame seeds on the outside add a slight crunch. The flavor is addicting and will make you start using tahini in all of your baking projects (like in this easy halva) not just hummus.

Ingredients
- 2 1/4 cups
all-purpose flour
- 1 tsp.
baking powder
- 1/2 tsp.
baking soda
- 1/2 tsp.
kosher salt
- 1/2 cup
(1 stick) butter, softened
- 3/4 cup
packed brown sugar
- 1/2 cup
granulated sugar
- 2
large eggs
- 1 tsp.
pure vanilla extract
- 3/4 cup
tahini
- 1/2 cup
sesame seeds
Directions
- Step 1Preheat oven to 350° and line 2 two baking sheets with parchment. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- Step 2In a large bowl using a hand mixer, beat butter and sugars together until combined. Add eggs, one at a time beating well after each egg, then add vanilla and tahini and beat until creamy. Add dry ingredients and beat until just combined.
- Step 3Roll about 2 tablespoons of dough into a ball, then roll in sesame seeds and place on prepared baking sheets 2” apart. Dough will be soft, but shouldn’t stick to your hands.
- Step 4Bake until the edges are lightly golden and just set, but middles are still soft, 13 to 14 minutes.
- Step 5Let cool on baking sheet for 5 minutes, then move to a cooling rack to cool completely.
