Ingredients
- 3 cups pear juice
- 4 1/2 Tbsp. heavy cream
- 1 1/2 cups sugar
- 1 Tbsp. orange juice
- fine salt
- 1 1/2 Tbsp. unsalted butter
- 1 qt. vanilla ice cream
- 2 Comice or Forelle pears
Directions
- Step 1In a medium nonreactive pot over medium heat, simmer pear juice until reduced to 3/4 cup, about 30 minutes. Remove from heat and stir in heavy cream. Set aside to cool.
- Step 2Meanwhile, in another nonreactive pot over medium heat, cook sugar, 3 tablespoons water, orange juice, and 1/8 teaspoon salt, stirring occasionally, until dark amber, about 25 minutes. Remove from heat and stir in butter and reserved pear-cream mixture. Set aside to cool.
- Step 3Divide ice cream and pear slices among bowls. Drizzle with caramel-pear sauce.
