Cherry JELL-O Salad

“Have you ever seen more happiness in a bowl?” asks Joanna Saltz, describing the combination of Cool Whip, JET-PUFFED Miniature Marshmallows, fruit cocktail, and maraschino cherries. While it’s been a few years (okay, decades) since a JELL-O salad regularly appeared on dining-room tables, we’re ready for a revival.
In this special, holiday-themed episode of Cooking Together, Delish's editorial director Joanna Saltz recreates her Aunt Helen’s famous Cherry JELL-O Salad with her kids. Watching Joanna fold in the Cherry JELL-O alone is pure satisfaction. “I love when we can pass recipes down from generation to generation, and my Aunt would be very, very, very proud of me right now because she really loved to make this.” She adds, “if this isn’t what the holidays are about, then I don’t know what is.”

Ingredients

(3-oz.) box JELL-O Cherry Gelatin
- 1
(8-oz.) tub COOL WHIP, thawed
- 1
(15-oz.) can of fruit cocktail, drained
- 1 1/2 cups
JET-PUFFED Miniature Marshmallows
- 1/2 cup
maraschino cherries
- 1/3 cup
maraschino cherry juice
Directions
- Step 1Prepare the cherry JELL-O according to package instructions using a large bowl. Refrigerate for 30 minutes up to 1½ hours, until JELL-O is soft-set.
- Step 2In a large bowl, fold together Cool Whip and JELL-O. Add fruit cocktail, mini marshmallows, maraschino cherries, and half the liquid from the maraschino cherry jar until ingredients are totally combined.
- Step 3Refrigerate for 1 hour before serving.
