These apple pie cups are everything we love about apple pie in a perfectly portioned cup-sized treat. Be generous with the apple filling. Unlike with regular pies, you’ll want to spoon enough so it’s higher than the cup itself for the ideal crust-to-filling ratio. We say, pile it on.

Ingredients

  • 1

    sheet frozen puff pastry dough, thawed

  • 3

    apples, diced

  • 2 tsp.

    lemon juice

  • 1 Tbsp.

    water

  • 1 3/4 tsp.

    pumpkin pie spice

  • 1 tsp.

    all-purpose flour

  • 1/4 cup

    store-bought dulce de leche

Directions

    1. Step 1Preheat oven to 375º F and spray a mini muffin tin with cooking spray. Roll out puff pastry and using a 4" cookie cutter, cut out 12 circles. Press a pastry circle into each cup to make crusts for each mini pie. Set aside in the refrigerator while you make the apple mixture. 
    2. Step 2Make apple pie filling: In a medium microwave-safe bowl, mix together the apples, lemon juice, water, cinnamon, brown sugar, and flour. Stir in the dulce de leche until well combined. Cover and microwave (on high) for 2 minutes, stir and set aside.
    3. Step 3Remove muffin tin from the refrigerator and spoon about 1 tablespoon of filling into each pastry cup, making sure to pile the apples higher than the muffin cup. Cook until crust is golden and apples are cooked, about 20 minutes. Remove from oven and cool slightly before serving.
