These lamb tacos are easy to prepare and even easier to assemble!

Ingredients
Tomatoes
- 1 1/2 lb. heirloom tomatoes
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. extra-virgin olive oil
- 1/2 tsp. kosher salt
- 1/4 tsp. Freshly ground black pepper
Herbed Yogurt
- 1 cup plain Greek yogurt
- 1/4 cup chopped fresh herbs (cilantro, dill, or parsley)
- 1/2 tsp. kosher salt
- 1/4 tsp. Freshly ground black pepper
Lamb
- 1 1/4 lb. ground lamb
- 4 tsp. Dijon mustard
- 4 tsp. Worcestershire sauce
- 2 tsp. garam masala (an Indian spice blend available at supermarkets)
- 3/4 tsp. kosher salt
- 1/2 tsp. Freshly ground black pepper
- 1/4 tsp. crushed red pepper flakes
- 1 Tbsp. extra-virgin olive oil
- 12 corn tortillas
- 1 1/2 cups Shredded romaine lettuce
Directions
- Step 1Tomatoes: Combine all ingredients in a medium bowl.
- Step 2Herbed yogurt: Blend all ingredients in a food processor until mixture turns pale green. Scrape into a small bowl.
- Step 3Lamb: Combine lamb, mustard, Worcestershire sauce, garam masala, salt, black pepper, and red pepper flakes in a large bowl until blended. Set a large, heavy skillet over medium-high heat until hot. Add oil and swirl to coat skillet. Add lamb mixture and cook, stirring frequently to break it up, until browned, about 6 minutes. Pour off fat.
- Step 4Spread tortillas with herbed yogurt and top with lamb, tomatoes, and lettuce.
