The classic watermelon salad is one of our go-to sides in the summer when we’re craving something refreshing, simple, and absolutely packed with the summer fruit. While we love the classic, when we’re looking to bulk up the staple salad, we add one of our favorite grains: quinoa. This watermelon quinoa salad has everything you love about the traditional summer salad: mint, feta, red onion, cucumber, a balsamic glaze, and of course, juicy watermelon. The addition of quinoa—one of our favorite grains—not only gives an added texture to the salad, but also a nutritious boost. Perfect for a more-filling BBQ side or a light and refreshing summer lunch, this creative take on a classic is the best way to shake up your summer.
Just like our classic watermelon salad, you can get creative here. We love salty, crumbly feta in this salad, but feel free to switch it out for goat cheese or fresh mozzarella balls if that’s more your thing. Not a balsamic glaze fan? Try the dressing from our classic watermelon salad instead!
Tip: If raw red onions are a bit too harsh for you, slice and soak 'em in water for about 15 minutes, then drain and pat dry before using. This will help take some of that strong, harsh flavor out of the onion.

Ingredients
- 2 cups
quinoa, cooked and cooled
- 3 cups
watermelon, cut in 1/2-inch cubes
- 1 cup
cucumber, cut into 1/2-inch cubes
- 1/2
small red onion, thinly sliced
- 1/2 cup
feta
- 1/2 cup
mint leaves, torn
- 1/4 cup
balsamic glaze
Kosher salt
Directions
- Step 1Toss all ingredients together, reserving some feta, mint, and balsamic for garnish. Season with salt and top with extra feta, mint, and balsamic glaze. Serve.
