Ingredients
- 1 1/2 cups
all-purpose flour
- 1/4 cup
powdered sugar
- 2 tsp.
baking powder
- 1/2 tsp.
kosher salt
- 1 1/4 cups
whole milk
- 1
large egg yolk, plus 3 egg whites
- 1/4 cup
rainbow sprinkles, plus more for serving
- 4 Tbsp.
unsalted butter, melted and cooled
Cooking spray
- 1 cup
vanilla frosting
Whipped cream, for serving
Directions
- Step 1In a medium bowl, whisk flour, powdered sugar, baking powder, and salt until combined.
- Step 2In a large bowl, whisk milk, egg yolk, and butter until combined. Add the dry mixture and sprinkles to the wet mixture and fold until just combined.
- Step 3 In another large bowl, beat the egg whites on medium-high until stiff peaks form, about 1 minute. Fold the beaten whites into the batter, just until combined, being careful not to overmix.
- Step 4Heat a medium nonstick skillet over medium heat. Grease skillet with cooking spray. Pour about 1/2 cup pancake batter into pan. When little bubbles appear, about 2 minutes, flip and continue cooking until both sides are lightly golden, about 1 minute more. Transfer to a plate or wire rack to cool slightly. Repeat with remaining batter.
- Step 5Stack pancakes on two plates, layering frosting in between. Top with whipped cream and more sprinkles.
