Ingredients

large white onions, peeled
- 3/4 cup
buttermilk
- 1/2 cup
pilsner beer
- 2 Tbsp.
malt vinegar, plus more for serving
- 1
large egg
- 1 1/4 cups
unbleached all-purpose flour
- 1/2 tsp.
sweet paprika
Pinch cayenne pepper
Kosher salt
Vegetable oil, for frying
Flaky sea salt
Directions
- Step 1Cut onions crosswise into ½-inch thick rings, separate rings.
- Step 2In a medium bowl, whisk buttermilk, beer, vinegar, and egg. Stir in flour, paprika, and cayenne and season with salt.
- Step 3Heat ½-inch oil in a large cast iron skillet until hot. Dip one onion ring into batter and then carefully place in hot oil. Cook, turning halfway through, until golden, about 5 minutes. Repeating with remaining rings, cooking multiple at a time, but not overfilling skillet. Remove as done with a kitchen spider or slotted spoon to a wire rack or paper towel lined plate and season with flaky salt salt immediately.
- Step 4Sprinkle onion rings with more vinegar and serve with malt vinegar.
