Irish coffee popsicles are what we never knew we needed. The first layer is made of a Baileys spiked coffee and then topped with a second layer of creamy chocolate. It's an afternoon pick-me-up that always hits the spot. Our Baileys Coffee Slushies are the perfect frozen treat for when you don't have the time to wait for popsicles to freeze.

Ingredients
For the coffee layer:
- 3/4 cup
strong brewed coffee
- 1/4 cup
Bailey's Irish Cream
- 1/4 cup
sweetened condensed milk
For the chocolate layer:
- 1/2 cup
sweetened condensed milk
- 1/2 cup
whole milk
- 1/4 cup
unsweetened dark cocoa powder
Directions
- Step 1Make the first layer: In a medium bowl, whisk the coffee, Baileys, and sweetened condensed milk until well combined. Divide between 10 popsicle molds, add sticks. Freeze until firm, at least 1 hour.
- Step 2Meanwhile, make the second layer: In a medium bowl, whisk the condensed milk, whole milk, and cocoa powder until cocoa powder is dissolved and mixture is well combined. Divide between the molds (with the now frozen cream layer).
- Step 3Return to freezer for at least 4 hours, or until frozen. Before serving, run the molds under warm water to loosen the pop.
