Sea Island red peas are a particular brand of heirloom legumes, but if you cannot get them, you can easily use black-eyed peas instead.

Ingredients
- 1 Tbsp. extra-virgin olive oil
- 1 Tbsp. unsalted butter
- 2 stalk celery
- 1 small onion
- kosher salt
- Freshly ground pepper
- 2 cups Sea Island red peas* or black-eyed peas
- 8 cups chicken or vegetable stock
Directions
- Step 1In a large, heavy-bottomed pot over medium-high heat, heat oil and butter. Add celery and onion and sauté. Season lightly with salt and pepper and cook until vegetables are tender, about 5 minutes.
- Step 2Add peas and stock. Cover and simmer over medium heat until peas are tender, about 1 1/4 hours. Season broth with salt and pepper and simmer until peas absorb salt, about 15 minutes more.
