What is a marinade?
Marinades ensure a boost of flavor and an increase of moisture in a cooked piece of protein. They are normally made with an acid (such as citrus juice or vinegar), a fat (such as a type of oil), salt (any type works, but we're partial to kosher), and seasonings (herbs, spices, seeds, sugars, etc.) We love kitchen bags (the bigger the better), because it allows the marinade to really get into the meat.
How long should I marinate for?
You can marinade for about an hour if you're in a rush, but the longer the better—overnight in the refrigerator is best.

Ingredients
- 4 lb.
mix of bone-in chicken thighs, breasts, and drumsticks
- 1/2 cup
low-sodium soy sauce
- 3 Tbsp.
honey
- 2 Tbsp.
rice wine vinegar
- 2 tsp.
toasted sesame oil
- 2
green onions, cut into thirds
- 1
2"-piece ginger, thinly sliced
- 3
garlic cloves, smashed
- 1
jalapeño, halved
Directions
- Step 1In a large bowl or ziplock bag, combine soy sauce, honey, vinegar, and sesame oil. Whisk to combine, until honey is fully dissolved.
- Step 2Add remaining ingredients to bowl or bag. Cover or seal and refrigerate at least 1 hour, up to overnight. Flip the bag occasionally to insure even marination.
- Step 3To bake: preheat oven to 450°. Transfer chicken and marinade (including green onions, ginger, garlic, and jalapeño) to a large baking dish, arranging chicken pieces in an even layer, skin-side up.
- Step 4Bake uncovered for 23 to 25 minutes, basting halfway through until the internal temperature reaches 165°. If you would like crisp skin, increase oven to broil on high, and broil until skin is crisp, 3 to 4 minutes more. (Watch closely; all broilers are different!)
