This is probably THE simplest recipe... ever? A slow-cooker meal made with only 4 ingredients is really something to celebrate. The chicken falls apart and becomes immensely tender, flavored with the familiar flavors of chunky salsa and taco seasoning, and brightened up with bursts of lime juice. This recipe is the epitome of set-it-and-forget-it, and once made, its uses are endless. Keep reading on to discover everything you can do with this quick and easy dinner.
What People Are Saying:
"This was delicious! Had rice, burritos, and chips for my family to finish however they wanted, which is great for 4 teenagers! So good and so easy! Definitely a repeat!" - cke2917
With only two steps, this is a blink-and-you-might-miss-it recipe. Grab your slow cooker, and place your chicken breasts on the bottom, topping with your taco seasoning and then half of the salsa.
Cover it, and then decide how much patience you have. You can cook on high for 3 hours, or on low for 6 to 8 hours—the choice is yours. Once it’s ready, use 2 forks to shred your chicken.
Add in the other half of your salsa, and give everything a good toss to fully combine.
Once fully tossed, I like to add some fresh cilantro on top, but you can skip this if you don’t have any on hand.

Like most dump-and-go recipes, this one is extremely versatile. Want more veggies? Add in some black beans, corn, red peppers and onions, or canned tomatoes. Not a chunky salsa fan? Use your favorite, or even switch it up with salsa verde.
My favorite thing about this recipe? You can use it in countless ways! Serve it over rice, in lettuce cups, with tortilla chips, or as a filling to tacos, enchiladas, burritos, or burrito bowls topped with sour cream, hot sauce, and (even more) salsa. Really, the possibilities are endless here—feel free to get creative.
