Ingredients
- 1 cup
(2 sticks) butter, softened
- 1 cup
granulated sugar
- 1 cup
packed brown sugar
- 1 Tbsp.
pure vanilla extract
- 2
large eggs
- 2 cups
all-purpose flour
- 2 tsp.
baking powder
- 1 tsp.
baking soda
- 1 Tbsp.
ground cinnamon
- 1 tsp.
kosher salt
- 1 cup
semisweet chocolate chips
- 1 cup
peanut butter chips
- 2 cups
old-fashioned rolled oats
- 1 1/2 cups
unsweetened coconut flakes
- 2 cups
chopped pecans (8 oz.)
Directions
- Step 1Preheat oven to 375º and line 2 large baking sheets with parchment paper.
- Step 2In a large bowl, using a hand mixer, beat butter and sugars until light and fluffy, about 2 minutes. Slowly beat in vanilla extract and eggs.
- Step 3In a separate bowl, mix together flour, baking powder, baking soda, cinnamon, and salt. Stir into butter mixture. Fold in chocolate chips, peanut butter chips, oats, coconut, and pecans.
- Step 4Roll dough into 1 1/2" balls, placing them about 2" apart on prepared baking sheets.
- Step 5Bake cookies for 10 to 12 minutes, or until lightly golden.
