Being on the Keto diet doesn't mean you have to miss out on all of your favorite foods, especially waffles! Chaffles, or cheese waffles, make a great breakfast, lunch, or dinner. We opted to top ours with all of favorite pizza toppings but you can even leave these plain and top them with the classic butter and syrup (Keto-friendly, of course). The cheese ensures these crisp up to absolute perfection.

Ingredients
For pizza Chaffles:
- 2
large eggs
- 2 Tbsp.
almond flour
- 1/2 tsp.
kosher salt
- 1/2 tsp.
baking soda
- 1 1/2 cups
shredded mozzarella, divided
- 1/2 cup
marinara
- 1/3 cup
pepperoni slices
Freshly grated Parmesan, for serving
Directions
- Step 1Preheat waffle maker according to manufacturer's directions. In a medium bowl, whisk eggs, almond flour, salt, and baking soda together. Add 1 cup mozzarella and stir to coat.
- Step 2Pour 1/2 cup mixture into center of waffle maker and cook until golden and crispy, 2 to 3 minutes. Repeat with remaining batter.
- Step 3Immediately top with marinara, remaining ½ cup mozzarella, pepperoni, and a sprinkle of Parmesan.
