We love pancakes and we love grilled cheese, so it was only a matter of time before we put the two together for the ultimate food mash-up. We proudly present to you the Grilled Cheese Pancake, complete with three of our most humble household cheeses: cheddar, mozzarella, and Parmesan. Know that these aren't just any old pancake: there's 1/4 cup of sour cream in the batter for a slight tang and richness that makes each bite just a little bit more addictive and extraordinary. Ingredients
- 1 1/2 cups
all-purpose flour
- 2 tsp.
baking powder
- 1 tsp.
kosher salt
- 1 Tbsp.
granulated sugar
- 1 cup
plus 2 tbsp. milk
- 1/4 cup
sour cream
- 1
large egg
- 3 Tbsp.
melted butter, plus more for pan
- 1 cup
shredded cheddar
- 1 cup
shredded mozzarella
- 1/4 cup
freshly grated Parmesan
Coarsely ground black pepper
- 2 Tbsp.
mayonnaise
Maple syrup, for serving
Crumbled bacon, for garnish
Directions
- Step 1In a large bowl, whisk together flour, baking powder, salt, and sugar. In a medium bowl, whisk to combine milk, sour cream, egg, and melted butter. Gently fold dry ingredients into wet ingredients until just combined.
- Step 2In a large skillet over medium heat, melt ½ tablespoon butter. Pour a scant ⅓ cup pancake batter into pan twice to make two pancakes. When little bubbles appear, about 3 to 4 minutes, flip one pancake and top with ¼ cup cheddar, ¼ cup mozzarella, 1 tablespoon Parmesan, and a pinch black pepper. Flip remaining pancake. Continue cooking until second side is golden and cheese is melty, 3 minutes more.
- Step 3Top cheesy pancake with plain pancake, then evenly spread ½ tablespoon mayonnaise onto the top pancake. Flip and cook until a golden crust forms, 1 minute. Spread ½ tablespoon mayonnaise on to the second side, then flip to cook until a golden crust forms, 1 minute more. Transfer sandwich to a plate.
- Step 4Repeat with remaining batter, cheeses, and mayonnaise.
- Step 5Serve with maple syrup and garnish with bacon, if desired.
