Ever heard of zucchini relish? It's our new FAVORITE condiment, and we're here to say it's great on way more than just hot dogs. It's sweet, tangy flavor is good in basically anything. We love it on top of avocado toast, stirred into deviled egg filling, or spread onto pretty much any sandwich. (Trust us, you'll never want a chicken salad sandwich without it.)

Ingredients

medium or 6 small zucchinis, finely chopped
- 1
medium yellow onion, finely chopped
- 1
red bell pepper, finely chopped
- 1
orange bell pepper, finely chopped
- 3 Tbsp.
kosher salt or pickling salt
- 2 cups
apple cider vinegar
- 1 cup
granulated sugar
- 2 tsp.
mustard seeds
- 2 tsp.
ground turmeric
- 1 tsp.
coriander seeds
- 1/2 tsp.
crushed red pepper flakes
Directions
- Step 1Combine zucchini, onion, and peppers in a large bowl and toss with salt. Cover vegetables with cold water and let soak for 2 hours.
- Step 2When 2 hours have passed, drain and rinse vegetables. In a large sauce pan over medium heat, combine vinegar, sugar, mustard seeds, turmeric, coriander, and red pepper flakes and bring mixture up to a boil. Add drained vegetables and reduce to a simmer.
- Step 3Cook, stirring occasionally, for 10 to 12 minutes. Transfer to clean jars, let cool, and refrigerate.
