As much as we looove pasta, sometimes we crave something on the lighter side. Zucchini noodles are healthy, easy to prepare, and are the perfect blank canvas for your favorite sauces. (Zoodles a la bolognese sauce, anyone?)
All you need is a good spiralizer and a zucchini and you're ready to rock! Simply cut off the ends of your zucchini and twist away—in no time you'll have perfect curly noodles with not a trace of gluten.
We like sautéing them for a few minutes (just until al dente, like pasta!) in butter or olive oil, plus a little chopped garlic for added flavor. You could definitely get fancy with this zoodle ramen, or load up on protein and serve 'em topped with garlic butter meatballs. The sky's the limit!

Ingredients

small zucchini
- 1 Tbsp.
olive oil
Kosher salt
Freshly ground black pepper
Directions
- Step 1Cut both ends off each zucchini. Secure in spiralizer and twist to create noodles. Continue twisting until entire zucchini is spiralized, then discard core. Repeat with second zucchini.
- Step 2Heat oil in a large skillet over medium heat. Add zoodles and cook, stirring occasionally, until tender (but still al dente!), about 5 minutes. Season with salt and pepper and serve with sauce or cheese of your choice.
