Cooking with dried black beans is always better than using canned. And while it's easy to cook black beans, it can take a long time and some forethought. There is no need to think ahead with the Instant Pot. You can cook dried beans in 35 minutes, meaning you can still use them in that Nacho Soup you were planning on making tonight. Easy peasy.

Ingredients
- 1 lb.
bag dried black beans, rinsed
- 3 cups
low-sodium chicken (or vegetable) broth
- 1
shallot, peeled and halved
- 1
bay leaf
- 2
cloves garlic
Kosher salt
Freshly ground black pepper
- 1/4 cup
freshly chopped herbs, such as parsley, cilantro, thyme, and green onions
Directions
- Step 1To an Instant Pot add black beans, broth, shallot, bay leaf, and garlic. Season with salt and pepper. Place lid on Instant Pot and set to Manual, High and set time for 35 minutes.
- Step 2Let natural release for 15 minutes, then turn valve to quick release making sure to wait until cycle is complete before unlocking and removing lid. Season with more salt and pepper and garnish with herbs, if desired.
