Stuffed avocados make the perfect lunch or any gluten-free meal. This saucy buffalo chicken gets mixed with the avocado and some celery for crunch, and you can't skip the blue cheese when it comes to buffalo chicken!

Ingredients

avocados, pitted
- 2 cups
shredded rotisserie chicken
- 1
celery stalk, thinly sliced
- 1 cup
buffalo sauce
- 1/4 cup
ranch dressing, plus more for garnish
- 2
green onions, thinly sliced, plus more for garnish
Crumbled blue cheese, for serving
Directions
- Step 1Scoop out avocados, leaving a border. Dice avocado and set aside.
- Step 2In a large bowl, combine diced avocado, chicken, celery, buffalo sauce, ranch dressing, and green onions.
- Step 3Divide mixture among avocado halves and top with ranch dressing, green onions, and blue cheese.
