(gentle background music) - Hey guys, it's Justin from the Delish Test Kitchen. And I'm gonna show you the easiest, the most foolproof way to make corn on the cob. And that is in the microwave. Corn was domesticated over 9,000 years ago in modern day in Mexico, and has now bloomed into one of the largest staple crops in all of the world. It's grown more than wheat, it's grown more than rice. And there are in fact, six major categories of corn. But we're gonna focus on sweet corn, which is what you find in the farmer's market. What you shuck in the summer. The thing that is naturally, beautifully, delicious, and sweet. This recipe couldn't be more foolproof. The corn is actually gonna steam within the husk itself and it's gonna make it cooked perfectly. All the starches in the kernels are gonna gel, it's gonna get tender, the sweetness is gonna be perfect, and all we need is an ear of corn. If you do happen to buy corn, that's pre-shucked, that's totally fine. Just wrap it in a wet paper towel, it sorta works the same. I can't prove it, but I do think that cooking in its natural husk adds to the corny flavor, and it's fun. My favorite part of cooking corn in the microwave is a little hack that makes shucking a breeze. To start, you're going to cut off the end of the cob. Try to lose as little corn as possible. Because all of the hairs and the other parts of the husk are connected at the top. So once it's steamed, after you take it outta the microwave and it cools a little bit, you're essentially gonna be able to pull the cob right outta the husk. You're gonna have a clean husk, and no little hairs all over the corn. It's pretty miraculous and really satisfying. Our corn is trimmed, and now I'm gonna get it (door clicks) into the microwave. You don't even need to put a plate down. I'll put it right on the microwave plate itself. (door clicks) And we're gonna cook this for four minutes. But disclaimer, all microwaves are different and there are different sizes of ears of corn, so it's an art, not a science. Go for three and a half minutes, pull off a little kernel of corn, taste it. If it's tender, sweet, perfect, pull it out. If it needs to go for a little longer, pump it in for 30 more seconds, see how it comes out. It's about four minutes. Looks amazing. I'm gonna take it out with tongs, 'cuz these are very hot. And then I'm gonna show you the perfect, shocking hack. I let the cobs cool for a minute or two, just so that they're handleable. And now we're going to just gently push the cob out of the corn, and you're gonna see how insane this is. It's so easy. It's just so cleanly coming out with zero hairs, and you can just pull it from the other side. Look at that. That is insane. I've never shucked corn that quickly. It was in like 15 seconds. You can even do this when you're grilling corn, or you just wanna shuck regularly, toss it in the microwave for like 30 seconds in the husk, it's painless. So look, two perfectly cooked, perfectly shucked cobs that are basically ready to eat. But if you are one of those people that wants to make like corn salad or esquites, I have another hack to show you how to get awesome kernels, very easily with no mess. When we shave the kernels off our cob, they're gonna fall in one direction. So I like using something like a baking dish or a frying pan with a high lip, because then we're gonna use a paring knife to shave our kernels off the cob. (kernels crunch) And then they should just fall in one direction. Since we want them to continue to fall in one direction you're just gonna turn the cob and shave accordingly. (knife squeaks on plate) Again, and they will continue to fall in this direction, avoiding mess and getting perfect kernels every time. If any of them are sticking together, like this in one row, you can just break them up with your fingers. Getting the kernels off the cob is great for other preparations like corn salad, creamed corn, but I personally just love it off the cob. I'll roll it on its own stick of butter, season it like crazy heavily with salt and black pepper, and just go to town until it's like totally clean. That's basically all we have for the recipe. The recipe kind of starts after the corn is cooked. You could eat it right off the cob with a little bit of butter. You could toss it in a bowl with some salt and pepper. You could make corn salad. You could make corn pudding. Truly, the world is your corn cob or your oyster, However you wanna say it. But now I'm just gonna try it, my favorite way, which is salt and pepper, butter on corn on the cob. (corn kernels crunch) Is there anything better? I honestly challenge you. This was truly so easy.
