It might sound a little crazy, but lime and vanilla perfectly compliment the super sweet flavor of the blueberries. Not a fan of lime? Try lemon or orange instead! Blueberries + citrus are flavor besties. Of course this jam is delicious on toast, (perhaps a slice of homemade sourdough) but we also love it stirred into a fresh batch of oatmeal.

Ingredients
- 3 1/2 cups
fresh blueberries
- 1/2 cup
granulated sugar
Juice of 1 lime
- 1 tsp.
lime zest
- 1/2 tsp.
pure vanilla extract
Directions
- Step 1In a large sauce pan over medium heat, combine blueberries, sugar, and lime juice. Cook, stirring frequently, until blueberries release their juice and mixture comes up to a boil, about 8 minutes.
- Step 2Continue cooking over medium heat until foam subsides and jam is thick, 12 to 15 minutes. Stir in lime zest and vanilla, transfer to clean glass jars, and let cool to room temperature.
- Step 3Transfer to refrigerator and cool completely.
