Baked salmon is a classic go-to for us when we’re looking for a weeknight dinner or a date night stunner. We love salmon baked simply, stuffed (we’re looking at you, Cajun-stuffed salmon), and loaded with plenty of toppings—just like we did here. In this recipe, we baked salmon fillets with red onion and lemon for around 20 minutes until perfectly cooked and flaky. While it’s baking, we create our topping of homemade marinated feta, tomatoes, olives, cucumbers, red onion, and dill. Put it all together, and the result is an under-an-hour dinner that’s worthy to be served at your next dinner party.
We love this meal because it comes with plenty of veggies, but if you’re looking for more pairing ideas, serve this salmon over a bed of arugula or spinach, or with garlic mashed potatoes, Greek orzo salad, and our cucumber, tomato, and onion salad. As well as being quick and easy, this dinner is also perfectly versatile. Switch up the ingredients based on what you have on hand, and add in your fave Mediterranean-inspired veggies and flavors.

Ingredients
For topping

extra-virgin olive oil
Juice of 2 lemons

dried oregano

red pepper flakes

cubed feta
- 1 cup
quartered tomatoes or halved cherry tomatoes
- 1/4 cup
sliced kalamata olives
- 1/4 cup
chopped Persian cucumbers
- 1/4
chopped red onion
- 2 Tbsp.
freshly chopped dill
For salmon
- 1
lemon, thinly sliced
- 1
small red onion, sliced

salmon fillets (12-oz. total), patted dry with paper towels

Directions
- Step 1Preheat oven to 375°. Marinate feta: In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, and red pepper flakes. Season with pepper and add feta, tossing to coat. Cover and refrigerate for about 10 minutes while preparing other ingredients.
- Step 2Roast fish: Scatter the sliced lemon and red onion at the bottom of a large baking dish. Add salmon fillets, skin side down, to baking dish. Season with salt and pepper and bake until opaque and flaky, 18 to 20 minutes.
- Step 3Meanwhile, make topping: Into the bowl with feta, add tomatoes, olives, cucumbers, chopped red onion, and dill. Fold gently to combine.
- Step 4To serve: Plate salmon with lemon and red onion slices and top with feta mixture.
