Guacamole is a simple dip and most recipes are just different variations of the same few ingredients. But every once in awhile someone decides they want to change it up and add an extra special ingredient, like cheddar cheese. Does cheese belong in guacamole? My instinct says no, but some taste testers weren't as appalled by the thought. Maybe it won't be so bad? Maybe it will be horrid. Read on to find out if classic or adventurous is better.
ALTON'S RECIPE
As expected, Alton Brown plays it safe with his guacamole. It's straight forward and made of the classic ingredients. It's good and just what you want out of guacamole. Has a little heat from the jalapeños and refreshing taste from the lime juice. No one would be disappointed if this guac made an appearance at a party. Our taste testers were pleased and had nothing bad to say. Always a a good sign.
CHRISSY'S RECIPE
Chrissy, also unsurprisingly, brings us the curveball. Chrissy's guac starts off great and then at the last second calls for a whole cup of shredded cheddar. Unexpected and not exactly what we want in our guacamole. Most taste testers agree and think it's too overpowering. The cheddar takes over and give the other ingredients no chance to shine. I tried her guac before adding the cheese, just to see how it was, and it was actually quite good. She has a good balance of flavor, but then all hope was lost once the cheese went in.
THE VERDICT
Alton was the very clear winner this time around. Alton's recipe proves there is no need to go overboard. When it comes to something like guacamole simple is best. Our taste tasters much preferred his guac and thought Chrissy's was just going too far. Sometimes you just can't beat the classic.
