Ingredients
- 60
thin salami slices, about 2 1/2" in diameter
- 1 cup
shredded mozzarella
- 12
large eggs
Kosher salt
Freshly ground black pepper
Freshly chopped parsley, for garnish
Directions
- Step 1Preheat oven to 400º. Line the bottom of each cup of a 12-cup nonstick muffin tin with a slice of salami. Arrange 4 salamis around the center slice. Sprinkle each cup with mozzarella and crack an egg inside. Season with salt and pepper.
- Step 2Bake until eggs are cooked through, 12 to 15 minutes.
- Step 3Garnish with parsley before serving.
