This paleo granola will give you a carb fix without the grains.
What makes this granola paleo?
There are no oats! Granola is typically made with a mixture of oats, nuts and seeds, a sweetener, and a fat (like oil). This granola skips the oats (no wheat allowed on paleo), instead using 2 whole cups of nuts and 1 1/4 cups of seeds to compensate. For the sweetener, we go with honey, which produces a granola with nice clusters, and coconut oil for the fat.
Can I change up the nuts?
Absolutely. We love the almond-pecan combo, but walnuts and pistachios are great subs.
Why so many seeds?!
Seeds add nice crunch and flavor—and are so good for you! They're filled with antioxidants and healthy fats. If your supermarket or health food store has a bulk aisle, stock up on them there and experiment with which varieties you like. Even if you change some up, don't skip the sesame seeds, which gives this granola a nice savory flavor and helps balance the sweetness of the honey.
Can I swap out the spices?
Of course! Ground ginger or even a pinch or cayenne would add some kick. If you're obsessed with pumpkin everything, pumpkin pie spice can be swapped for the cinnamon and nutmeg.

pecans
- 1 cup
dried cranberries
- 1/2 cup
pumpkin seeds
- 1/2 cup
unsweetened coconut flakes
- 1/4 cup
flax seeds
- 1/4 cup
sunflower seeds
- 1/4 cup
sesame seeds
- 1 tsp.
kosher salt
- 1 tsp.
ground cinnamon
- 1/2 tsp.
ground nutmeg
- 3 Tbsp.
melted coconut oil
- 1/4 cup
honey
- 1 tsp.
pure vanilla extract
Directions
For the Oven:
- Step 1Preheat oven to 350° and grease a baking sheet with cooking spray. In a large bowl combine almonds, pecans, cranberries, pumpkin seeds, coconut, flax seeds, sunflower seeds, sesame seeds, salt, cinnamon, and nutmeg.
- Step 2In a small bowl, whisk together oil, honey, and vanilla.
- Step 3Pour over seeds and toss to coat. Spread granola on prepared baking sheet in an even layer.
- Step 4Bake until golden and nuts are toasted, 23 minutes.
- Step 5Let cool completely on baking sheet before storing in a resealable container.
For the Air Fryer:
- Step 1In a large bowl, combine almonds, pecans, cranberries, pumpkin seeds, coconut, flax seeds, sunflower seeds, sesame seeds, salt, cinnamon, and nutmeg.
- Step 2In a small bowl, whisk together oil, honey, and vanilla. Pour over granola mixture and toss to coat.
- Step 3Line air-fryer basket with parchment paper, then add one third to one half of the mixture (depending on the size of the air fryer). Cook at 350°, stirring halfway through, until granola is golden and crispy, 12 to 14 minutes. Repeat with remaining granola mixture.
This granola will keep up to 3 weeks in an airtight container.
