Many folks, when they start their journey on the keto diet, think they have to say goodbye to all their favorite sweet breakfast treats. But these Keto Waffles is here to prove you wrong! This recipe is totally keto without sacrificing any of the flavor and crispiness you expect from a typical waffle.
What is and isn't allowed in the keto diet?
If you're following the ketogenic diet, you're eating low-carb and high-fat meals. Which means you're not allowed all-purpose flour or regular (granulated) sugar. Butter though, is totally OK.
What makes these waffles keto-friendly?
Almond flour and Swerve are used in place of flour and sugar. (You could also use Stevia.) Almond butter and butter (a full stick!) provide the fat. Remember fat=good on this diet. And these waffles will keep you full and satisfied for hours.
What's the deal with almond flour?
Almond flour is just finely ground blanched almonds. Yes, you can make it yourself, but we much prefer to buy it pre-made. In addition to being low-carb, it's naturally gluten free. AND it's high in vitamin E and magnesium.
Do I need to whip the egg whites?
Yes. Doing so will incorporate more air to your waffles and make them super light and fluffy. It's the same technique used in our classic Belgium Waffles.
Can I use peanut butter instead?
Absolutely. You should be able to use whichever nut butter you prefer. It's mostly a matter of taste. Just make sure there's no added sugar!

Ingredients
- 2 cups
almond flour
- 1/4 cup
granulated stevia (preferably Swerve)
- 2 tsp.
baking powder
- 1 tsp.
kosher salt
- 1/2 cup
(1 stick) butter, plus more for serving
- 1/2 cup
almond butter
- 4
large eggs, separated
- 2 tsp.
pure vanilla extract

Directions
- Step 1Preheat waffle iron to high. In a large bowl, whisk almond flour, stevia, baking powder, and salt until combined.
- Step 2In a small microwave-safe bowl, melt butter and almond butter, stirring every 15 seconds. Stir melted butter mixture into dry ingredients until combined, then stir in egg yolks and vanilla.
- Step 3In another large bowl, using a hand mixer, beat egg whites to stiff peaks. Fold whites into batter until just combined.
- Step 4Coat waffle iron with cooking spray. Add half of the batter, close the lid, and cook until golden, about 5 minutes. Transfer to a plate and repeat with the remaining batter.
- Step 5Top with butter and maple syrup.
