These turkey meatballs are the perfect dinner to get you back on track after a long string of late-night takeout. They're light, fresh, and full of flavor. Try them over rice noodles, a bed of greens, or some brown rice.

Ingredients
- 3 oz.
rice noodles
- 1 tsp.
sesame oil
- 8 oz.
ground turkey
- 1/2 cup
whole-wheat bread crumbs
- 2 tsp.
Sriracha
- 2
cloves garlic, minced
- 1/4 cup
finely chopped scallions
- 1
egg, beaten
- 1 1/2 cups
low-sodium chicken broth
- 1/2
red bell pepper, sliced
- 1/4 cup
freshly chopped cilantro, for garnish
- 1/4
Lime wedge, for serving
Directions
- Step 1Prepare the noodles according to package directions. Place in a bowl and toss in the sesame oil. Set aside.
- Step 2Turn the Instant Pot on. Use the Sauté program and set to Normal. While the Instant Pot is heating, combine turkey, bread crumbs, Sriracha, garlic, scallions, and egg into a large bowl. Mix well and shape into 8 meatballs.
- Step 3Add meatballs to the Instant Pot and cook for 2 minutes on each side. Add the broth, then change the setting to Manual and cook on Normal for 5 minutes.
- Step 4Quick release the pressure according to manufacturer's directions.
- Step 5Place four of the meatballs and sliced peppers into each bowl with the noodles. Pour over the chicken broth. Garnish with cilantro and lime wedge. Stir in another teaspoon of Sriracha, if desired.
