Not only are these blondies packed with protein, they're totally gluten-free (so long as you use GF oats!). They definitely taste a little healthier than, say, snickerdoodle blondies, but they're a pretty dang good substitute for when you're craving something sweet.

Ingredients
- 1
(15.5-oz.) can white beans, rinsed and drained
- 1/2 cup
maple syrup
- 1/2 cup
plus 2 tbsp. quick cooking oats
- 2 tsp.
pure vanilla extract
- 1/4 cup
softened butter
- 1/2 tsp.
baking powder
- 1/2 tsp.
kosher salt
Melted white chocolate, for drizzling
Directions
- Step 1Preheat oven to 350°. Line an 8”-x-8” baking pan with parchment paper and grease with cooking spray. In a blender, or in a food processor, blend all ingredients until smooth.
- Step 2Transfer batter to prepared pan and bake 25 minutes until lightly golden.
- Step 3Let cool completely before drizzling with white chocolate and slicing into squares.
