Ingredients
Cooking spray, for pan
- 1 cup
all-purpose flour
- 1/2 cup
cocoa powder
- 1 tsp.
baking powder
- 1 tsp.
ground cinnamon
- 1/2 tsp.
kosher salt
- 1/2 cup
mashed avocado
- 1 cup
granulated sugar
- 2
large eggs
- 1 tsp.
pure vanilla extract
- 1 1/4 cups
grated zucchini
- 1 cup
chocolate chips
Directions
- Step 1Preheat oven to 350°. Line a loaf pan with parchment paper and grease with cooking spray. In a large bowl, whisk together flour, cocoa powder, baking powder, cinnamon, and salt.
- Step 2In another large bowl, stir together avocado, sugar, eggs, and vanilla. Add zucchini, then add flour mixture. Fold in chocolate chips.
- Step 3Transfer batter to prepared pan and bake until a toothpick inserted into the center comes out clean, about 1 hour.
- Step 4 Let cool slightly in pan, then transfer to a cooling rack and cool completely.
