Oreo Klondike Cheesecake Bars

When cutting these bars, try running your knife under super hot water (and drying thoroughly) before slicing. You'll get much cleaner cuts that way!

Ingredients
- 1 cup
heavy cream
- 2
(8-oz.) blocks cream cheese, softened
- 1/4 cup
sour cream
- 1 cup
powdered sugar
- 1 tsp.
pure vanilla extract
Pinch kosher salt
- 4
Oreo Klondike Bars
- 10
crushed Oreo's
- 1/4 cup
semisweet chocolate chips, melted
- 1/4 cup
white chocolate chips, melted
Directions
- Step 1Line an 8"-x-8" pan with parchment paper. In a large bowl using a hand mixer (or in the bowl of a stand mixer), beat heavy cream until stiff peaks form, 5 minutes.
- Step 2In another large bowl beat cream cheese and sour cream until smooth then add powdered sugar, vanilla, and salt. Fold whipped cream into cream cheese mixture.
- Step 3Unwrap Klondike bars and place in prepared pan. Pour cream cheese mixture over Klondike bars and smooth top with a spatula. Sprinkle with crushed Oreos and freeze until firm, 4 hours or up to overnight.
- Step 4When firm, drizzle with melted chocolate, slice into bars, and serve immediately.
