Ingredients
- 1/2 grapefruit
- 1/4 cup 1% milk fat cottage cheese
- 2 oz. cooked shrimp
- 1 Tbsp. capers
- 1 pinch paprika
- salt
- Pepper
Directions
- Step 1Cut grapefruit in half. Remove the pulp with a grapefruit knife. Remove the pith and cut into large cubes.
- Step 2Mix the cottage cheese, shrimp, capers, and paprika in a bowl, and season with salt and pepper. Mix in grapefruit cubes. Scrape any remaining pith from one grapefruit half, and serve salad in grapefruit peel "bowl."
