Ingredients
For yogurt cucumber dip
- 1 1/2 cups full-fat Greek yogurt
- 2 small cucumbers, finely chopped
- 1 garlic clove, minced
- Juice of 1/2 lemon
- 1 Tbsp. freshly chopped dill
- Pinch cumin
- Kosher salt
- Freshly ground black pepper
- 1 tsp. extra-virgin olive oil, for finishing (optional)
For corn salsa
- 1 cup charred corn
- 1 avocado, chopped
- 1 cup grape tomatoes, quartered
- 1/2 red onion, finely chopped
- 2 Tbsp. sliced basil
- 1/4 cup extra-virgin olive oil
- 1/3 cup lime juice
- 1 clove garlic, minced
- 1 tsp. crushed red pepper flakes
- Kosher salt
For sour cream & onion dip
- 1 Tbsp. extra-virgin olive oil
- 1 small yellow onion, minced
- 1 garlic clove, minced
- Kosher salt
- Freshly cracked black pepper
- 1 cup sour cream
- 1 tsp. freshly chopped chives
For pimento cheese dip
- 1 cup shredded cheddar
- 1 cup shredded white cheddar
- 1 (8-oz.) package cream cheese, softened
- 1/3 cup mayonnaise
- 1/2 cup chopped pimentos
- 2 tsp. hot sauce
- 1 tsp. Worcestershire sauce
- 1/2 tsp. garlic powder
- Kosher salt
Store bought:
- 1 large bag corn chips
- 1 large bag potato chips
- 1 large bag pita chips
- 1 (10-oz) container of hummus
- 1 (10-oz) container of guacamole
Directions
- Step 1Make yogurt dip: In a medium bowl stir together yogurt, cucumbers, garlic, lemon juice, dill and cumin. Season with salt and pepper and transfer to serving bowl. Drizzle with olive oil if using.
- Step 2Make corn salsa: In a large bowl combine corn, avocado, tomatoes, onion and basil. In a medium bowl, combine olive oil, lime, garlic and red pepper flakes. Season with salt and whisk until smooth. Pour mixture over the salsa and stir until ingredients are fully coated.
- Step 3Make sour cream & onion dip: In a medium skillet over medium-low heat, heat oil. Add onions and cook, stirring occasionally, until golden and caramelized, 15 to 20 minutes. Stir in garlic and cook until fragrant, 2 minutes. Season with salt and pepper and remove from heat.
- Step 4In a medium bowl, stir together sour cream and onion mixture. Season with more salt and pepper if needed and transfer to serving bowl. Garnish with chives and serve immediately.
- Step 5Make pimento cheese dip: In a large bowl, stir together all ingredients. Transfer to serving dish.
- Step 6Transfer hummus and guacamole to serving dishes. Place all dips on a platter and surround with chips.
