Watermelon and raspberries combine in this recipe to create the most refreshing drink of summer. Smoothies are one of my favorite grab-and-go breakfasts in the hot summer months: they’re so easy to whip up, are extra refreshing, and cool you off with every sip. This watermelon recipe celebrates the signature summer fruit, with several welcome additions to sweeten (and bulk!) this smoothie up. Make it in the morning to wake up with a smile on your face, or as an afternoon treat to sip on by the pool.
• Watermelon: The star of this smoothie is, of course, refreshing watermelon. Chop your watermelon into small cubes before using. If you want an extra-frosty smoothie, freeze your watermelon, just like we did in these frozen watermelon margaritas.
• Raspberries: Frozen raspberries not only help to up the sweetness factor, but also achieve that thick, icy texture. If you’re not feeling raspberries, you can sub them out for frozen strawberries or the berry of your choice.
• Greek Yogurt: All smoothies need a thickener, and I went with plain Greek yogurt here. Alternatively, you can use plain yogurt, or decrease the amount if you prefer a thinner smoothie.
• Chia Seeds: If you don’t usually add chia seeds to your smoothies, then you’ve been missing out. They won’t affect the taste, but will make this smoothie one that will actually fill you up. They do add a bit of texture, so if you’re not a fan, you can leave them out.
It couldn't be easier. Simply add your watermelon, raspberries, yogurt, and lime juice to a blender and blend until smooth. If your smoothie isn't reaching your desired texture, feel free to adjust by adding more yogurt, frozen fruit, or even a bit of water to thin it out.
After your smoothie is blended together, add the chia seeds, and blend on low until fully incorporated. Keep in mind that the chia seeds will still be whole! That's where the added texture comes from.
If you want to make this breakfast a grab-and-go situation, then prep all of your ingredients ahead of time and simply toss in the blender to create.
