Ingredients
- 12 egg roll wrappers
- 1 1/2 cups smooth peanut butter
- 4 bananas, sliced into thirds
- 12 slices bacon, cooked and halved
- 1 cup melted chocolate, for garnish
- melted peanut butter, for garnish
- Vegetable oil, for frying
Directions
- Step 1Place an egg roll wrapper on a clean surface so that it looks like a diamond, not a square. Spoon approximately 2 tablespoons peanut butter into the center of the egg roll wrapper. Top with 1 bacon halve and 1 3"-4" piece banana. Fold up bottom half and tightly fold in sides. Gently roll, then seal fold with a couple drops of water. Repeat with remaining ingredients.
- Step 2Pour enough vegetable oil into a large deep skillet so that oil reaches 1" up sides of skillet. Heat skillet over medium heat until oil bubbles vigorously when a drop of water is added. Working in batches, add egg rolls and fry until golden, 1 minute per side. Transfer to a paper towel-lined plate and let cool slightly. Repeat with remaining egg rolls.
- Step 3Drizzle with melted chocolate and peanut butter and serve.
